The fruit for the 2021 Mermerus Shiraz was sourced from our neighbour’s vineyard in Drysdale on the Bellarine Peninsula, and made onsite in our winery. Unusually cool summer weather led to a relatively late harvest. The grapes were handled in the traditional way with minimal intervention. The fruit was open fermented as whole berries, basket pressed, and then aged in seasoned French oak barriques for 12 months. This elegant Shiraz displays attractive Blackberry, Mulberry and herbal fruit characters supported by fine grained tannins.
