Winemaking

Mermerus Vineyard was established in 1996, and occupies part of the eastern slope of Murradoc Hill on the Bellarine peninsula.

Production is centred in our on site winery and grapes are sourced mainly from the estate, with a small amount of fruit from local vineyards being used in some years.

Traditional labour intensive winemaking techniques aim to preserve the essential fruit character of the vineyard. Indigenous (wild) yeast fermentation plays a major part in the production of our wines. Intense and delicate fruit characters are encouraged by hand picking and gentle handling in small lots.

The aim of oak maturation where used is to add an extra dimensionand balance to our wines rather than as a dominating influence.
